Consultabile on-line uno studio di riferimento per il settore, prodotto dall'Università di Newcastle. Documento scientifico che mette a confronto la qualità delle produzioni agro-alimentari biologiche con quelle convenzionali. Risulta chiaro che il metodo di produzione influisce sulla qualità del cibo. Si è dimostrato come i prodotti agro-alimentari bio (frutta, ortaggi e cereali) contengano significative differenze di concentrazione di nutrienti (più antiossidanti, polifenoli, flavonoidi...), minori concentrazioni di metalli pesanti (cadmio) e residui da pesticidi.
